How it all happened.

Start with two vegetarians, mix in a wedding, stir in your favorite spices and let rest for 2 years. Finally toss in a pregnancy. Nine months later you have a beautiful new baby and a really bad time to start a business. I, however, to the annoyance of my very supportive wife, just couldn't deny any fellow vegetarians these long-awaited treats.

The idea popped into my head in late November of 2006. Every year my wife and I make toffee to give out as gifts for Christmas. But that year, I thought it would be fun to make some fancy chocolate-covered marshmallows, since neither of us had eaten one for years. I looked up some online recipes for vegetarian marshmallows and spent all of December trying to get them to work. None did. Just before Christmas, I finally made something that could almost pass as marshmallow, using my own recipe. We passed it out and it was a hit. The mallow wasn't quite right, though, and I just wouldn't settle. So, I spent the next several months in the kitchen making batch after batch until I was able to really perfect the recipe into something that we are now truly proud of.

Our goal is to eventually grow this small operation into something that can support us full time so we can more easily balance our time between our growing family and our growing business. We would really like to dedicate our time to making new and more interesting flavors and eventually develop a vegan version of our mallow that tastes just as amazing as our vegetarian selection.
